John Cook is the man behind Ember. Before starting these monthly events, John ran the acclaimed Arbennig (and was awarded the highest score in the city for cooking by the Good Food Guide); so when he decided to run a pop-up supper club, we sat up and took notice. And booked tickets. Expect an absolute commitment to what’s in season and a menu of big flavours, with equal weight given to meat-free cooking. John and his wife Ceri also have a hand in Victoria Park’s lovely Nook and he has also found time to bring you Hoof at Sticky Fingers, which we rate as the best burgers currently in the city.
Ember, though, is where to really get to grips with his food: whether it’s chorizo ragu or salt aged beef with truffled beef fat potatoes, or ox cheek with beer and treacle sauce, or oxtail ragu with creamed potatoes, it’s comfort food dialled high. Details are everything: once tasted, you won’t forget his burnt cauliflower sauce in a hurry. And don’t worry if you don’t eat meat, because there’s no sense of ‘will this do’ at Ember: you might get marinated vegetables with pickled pear and hazelnut honey, or baked squash with pickled shallots, or a dessert of roasted pear and salted almonds: it’s sumptuous stuff.
From the beginning, Ember has been a huge hit, with tickets selling out quickly. It’s not hard to see why.
